Bacalaos Azkuene processes seafood, primarily salted-dried and frozen cod, along with other species. Its process includes cod cutting, drying, and packaging in separate rooms after the salt used at the source plant is removed.

Product sourcing

The company selects cod in Iceland, Norway, and the Faroe Islands, key fishing grounds for Gadus morhua. It requires all purchased cod to be legally caught using techniques that respect the marine environment. To serve demand throughout the year, the company has refrigerated facilities where products are stored under controlled temperatures.
