About Edomae Matsuki
Edomae Matsuki, Edomae Sushi in a Historic Bratislava Cellar
Edomae Matsuki is a Japanese restaurant at Ventúrska 18 in Bratislava. Its setting combines a traditional Slovak wine cellar built 300 years ago with Japanese elements such as hinoki cypress, tatami, and a Japanese garden. The restaurant says the blend is meant to express the friendship between Japan and Slovakia.
The restaurant is defined by the Edomae technique, an approach to sushi that works with seasonal ingredients to bring out their best. It distinguishes its offering from conventional sushi: rather than “鮓” as simple rice with fish, its “鮨” depends on seasonal ingredients and Edomae skill to highlight the product.
A Kitchen Team Trained in Japan
The kitchen is led by Yuya Fujita, chef and owner, who trained at Japan’s best-known culinary school. His background includes hotels and restaurants where he learned Chinese, French, and Japanese cooking techniques, followed by eight years as an owner and chef. At Matsuki, he oversees every detail: creating seasonal dishes, choosing ingredients, leading the kitchen team, preparing sushi, balancing flavors, and plating each dish.
The team also includes Misato Fujita, Kodai Matsui, Tomoya Shoji, and Kazune Takeuchi. Another chef, also trained at Japan’s most prestigious culinary school, gained experience at Michelin-starred restaurants and hotels before founding Edomae Sushi Matsuki. The approach includes the scientific study of cooking and a range of culinary techniques to bring the depth of Edomae sushi to European diners.
Tasting Menu and Advance Preparation
The tasting menu costs €170 and includes three seasonal appetizers, sashimi, a daily main course, nine pieces of sushi, a hot dish, and dessert. For an additional €30, guests can add exclusive ingredients to the tasting menu; ask the restaurant staff for details.
Edomae preparation takes time, and some ingredients require several days. The restaurant therefore asks guests to reserve at least a week ahead to allow enough time to prepare each service. It also asks guests to share any food intolerances or specific ingredient allergies in advance.
Recognition and Media Coverage
The restaurant was included in La Liste’s 2024 Hidden Gem Awards selection. Its website also features media appearances, including a segment on STV’s Dámsky klub and mentions in Culinary Experts, Best Asian Food Restaurant Magazine, and Food magazine, with archived entries dated October and December 2019.
