Salon 1905 is a fine dining restaurant located inside the iconic Geozavod building, in the historic centre of Belgrade. The venue occupies an early 20th-century building, described as an architectural masterpiece combining Baroque and Art Nouveau, with an interior of brass, marble and gold. The gastronomic offering is built around seasonal tasting menus and a wine list focused on Serbian heritage, complemented by international references.
Tasting menus and dining experience
The restaurant offers a seven-course tasting menu designed to showcase fresh, local produce. The menu changes with each season. The spring menu includes dishes such as smoked trout tartare with compressed cucumber and lemon powder, burnt leek with confit smoked egg yolk and goat's cheese sauce, pike-perch fillet poached in aromatic butter with trout roe, grilled seasonal mushroom with kajmak foam, grilled lamb fillet with peas and yoghurt, and pancetta roll with sweetbreads and black garlic. The dessert combines lemon and lavender meringue with white chocolate cream and lavender ice cream.
In addition to the seven-course menu, the offering includes a three-course menu for €80 per person available at lunch until 16:00, and a five-course menu for €125 per person. Pairing options are available: with Serbian wines for €205 (five courses) or €255 (seven courses), and with non-alcoholic cocktails for €195 (five courses) or €245 (seven courses). A five-course vegetarian menu (Garden Menu) and a version with two additional fish courses (River Menu) are also offered. The restaurant notes that it does not have an exclusively vegan option due to the presence of dairy in its dishes.
Contemporary Serbian cuisine
The cuisine is defined as high-quality international, with simple yet powerful recipes made with fresh ingredients. The team has international experience in the gourmet sector. The offering reinterprets Serbian culinary heritage through a contemporary lens, seeking balance, depth and the natural character of each product. The wine list traces the geographical history of Serbia and is completed with an international selection of French, Italian and New World wines.
Stefan Tomic, head chef
The head chef is Stefan Tomic, born in Belgrade. His background includes experience in gastronomy and hospitality, as well as in art, sport and adventure. As a former competitive rower, he developed an approach based on focus, endurance and precision. During his formative years in Rome he immersed himself in Italian culinary culture, an influence that shaped his style, centred on freshness, seasonality and the quality ingredients characteristic of Mediterranean cuisine. At Salon 1905 he applies these principles to the contemporary interpretation of Serbian cuisine.
Restaurant, bar and live music
The interior evokes the traditions of Vienna and Paris, with an atmosphere that combines opulence and intimacy. The restaurant features a large oak bar, open until 2:00, ideal for a drink after dinner. On Fridays and Saturdays a live band performs a repertoire of classic jazz, from Django to Chet. The non-alcoholic cocktail offering is made with artisanal ingredients inspired by traditional Serbian recipes, such as apple and pear cordials, wild berry blends, aromatic herbs and seasonal juices.
Accolades
The Michelin Guide recommends the restaurant and describes it as a sumptuous venue, one of the grandest in the city. Gault Millau ranks it number 1 in Serbia and highlights its captivating style and top-level culinary atmosphere. It is the only Serbian member of JRE (Jeunes Restaurateurs d'Europe). The website itself lists these distinctions and presents itself as the most exclusive fine dining restaurant in Belgrade.
Opening hours and reservations
The restaurant is open Monday to Saturday from 14:00 to 00:00. The kitchen closes at 23:00. Booking in advance is recommended. Reservations can be made through the website, with the option to choose between restaurant seating (tasting menu) or bar seating (drinks and desserts).
