Where to try Tottori beef-bone ramen: Fujiki or Gottsuo?

Fujiki focuses on a long-simmered broth, while Gottsuo serves late; compare two shops near Tottori Station.

In Tottori, a bowl of ramen can begin with an unusual ingredient: beef bones. The prefecture says gyukotsu ramen spread through central and western Tottori in the post-war period, when cattle use and local broth-making traditions shaped a regional soup. It may look like a simple shoyu ramen, but beef brings aroma, a faint sweetness and a depth different from tonkotsu. Near Tottori Station, Fujiki and Gottsuo offer two interpretations a few streets apart. Fujiki presents itself as a specialist in beef ramen. The city tourism guide highlights a broth simmered for 25 hours, tender seared chashu and three seasonings to choose from: soy, miso or salt. It also offers kaedama, extra noodles for the remaining broth. This setup makes it easy to compare the soup without relying on elaborate toppings. Visitor comments are mixed: some praise cleanliness, service and noodle texture, while others find certain sides heavy or simply do not connect with the broth’s flavour. Gottsuo opens as the city’s evening life gets going and serves until late. The tourism office describes it as a shop that has been part of local life for decades and highlights its beef-bone soup, aromatic vegetables and advertised daily batch of 100 bowls. Its long hours suit travellers arriving late or eating after an event. Reviews mention a clean, meaty flavour and staff willing to explain the menu; others find the broth salty or comment on the dining-room atmosphere. The difference is about timing as much as recipe. Fujiki is near the station and its listing includes daytime and evening service with weekly closures, though directories do not agree on every hour. Gottsuo, in Suehiroonsencho, lists 5:00 pm to 2:00 am and does not take reservations, but the daily limit can sell out. Choose Fujiki for lunch and a choice of seasonings; keep Gottsuo in mind for a later dinner. Check each shop’s notice: being nearby does not guarantee it will still be serving when you arrive.
