Santa Ana tacos: handmade corn at Zamora, birria on First Street and flour tortillas at Lola

Three kitchens tell different Santa Ana stories through tortillas, beef broth and a downtown dinner menu, with practical details gathered in their profiles.

The tortilla can be the first decision in a Santa Ana taco meal. At Taqueria Zamora, handmade corn carries a family restaurant’s substantial fillings. At La Super Birria, broth and beef change character between a bowl, a dorado and a cheese-filled taco. At Lola Gaspar, Sonoran-style flour holds lamb barbacoa or brisket suadero in an evening menu with cocktails.

Each kitchen has a different story of growth. Zamora followed Don Alberto’s backyard meals and neighborhood food cart. La Super Birria expanded within a candy shop until the food became the business. Lola Gaspar developed inside the Santora Building, then sharpened its Mexican cooking under chef Luis Perez. Those histories help explain the meals available today.

Zamora: give the handmade tortilla its due

The South Main Street restaurant opened in 1992 and still puts handmade corn tortillas at the center of its identity. Asada and carnitas tacos allow that masa to remain prominent; huaraches, sopes and potato dorados extend the choice of texture. A diner looking for breakfast can move toward chilaquiles and eggs instead.

It is also a practical kitchen for a larger order. Taco party bars, carnitas trays and fajita platters are listed separately from individual meals. The early opening is consistent across sources, although published weekend closing times disagree. The profile gives the restaurant’s two direct numbers and keeps that unresolved evening detail visible.

La Super Birria: one beef preparation, several textures

At 1041 West First Street, a bowl of beef birria makes broth part of the main meal. A dorado shifts attention toward the tortilla’s crisp edge, while quesabirria introduces melted cheese. Birria Tour is a useful comparison order, bringing several preparations together with consomé.

The merchant’s menu also lists ramen, Pizzirria, family packs and meat by the pound. These are different portions and formats, not simply new names for the same plate. Pickup and delivery are offered for the Santa Ana address. The restaurant’s wider branch network should not obscure which kitchen is actually preparing the order.

Lola Gaspar: make a downtown evening of it

Lola’s current tacos use flour tortillas, pickled onion and a mesquite-grilled tomato-and-dried-chile salsa. Carrot al pastor, lamb, brisket, shrimp and ribeye give a table distinct fillings to compare. A four-salsa flight and larger plates allow the meal to continue beyond tacos.

Sunday has its own brunch: the ribeye-and-quail-egg taco and huevos ahogados with lamb barbacoa turn the same kitchen toward a different part of the day. The restaurant accepts cards rather than cash and publishes specific afternoon and evening hours. Its profile gathers that schedule, the downtown address and the current route to book a table.

Bottom line

Match the meal to the occasion: corn tortillas and breakfast, a comparison of birria textures, or flour-tortilla tacos during a downtown evening.
