Five tacos with onion and beans describe only the beginning of a McAllen order. The tortilla might be corn, flour or a shell made from cheese. Pork can arrive from a trompo, steamed with cabbage or under caramelized pineapple. Knowing those differences makes a short lunch or a late dinner easier to organize than a list of restaurant names alone.
Three kitchens offer a useful route through the choices. El Rodeo Taco Express has a documented food-truck beginning and a particular attachment to trompo. Tacos El Plebe makes a sampler out of several named preparations. La Herradura brings the Río Bravo background of its founder into a concise bistec-and-tripa menu that continues into the early hours. Each profile gathers the details for ordering at the actual McAllen address.
Ware Road: El Rodeo's truck-grown dinner
El Rodeo started in a parking lot in September 2013. Its family traces the cooking to Monterrey and the first success to al pastor. Trompo remains an important choice, available crisp or soft. A standard order contains five tacos, onion, cilantro and charro beans; the four-taco combo adds half a baked potato and a drink.
That distinction makes portions understandable before ordering. The wider menu also serves corn tostadas called espadas, Progreso-style lonches and a botana for a shared table. Most weekdays begin at 5 p.m., so this is primarily an evening stop. Event catering operates separately from takeaway and ordinary platform delivery.
North Main: compare the fillings at El Plebe
El Plebe also grew from a food truck, but its current menu gives each classic taco a name. The namesake uses steamed pork with cabbage; El Rojo adds caramelized pineapple to pork or chicken; El de Asada focuses on grilled beef; El Compa brings barbacoa.
The five-taco sampler is useful when the attraction is comparison. More elaborate combinations, including a Takis-crusted quesadilla taco and beef or shrimp birria, move toward a larger meal. Online ordering and catering are available, while delivery platforms publish their own service windows. The McAllen restaurant closes Monday.
Trenton Road: La Herradura after midnight
Gerardo Garcia opened La Herradura in 2010 with the taco style of Río Bravo in mind. Bistec, tripa and mixed orders form the core. Corn and flour are the standard wrappers; a four-taco cheese-shell order and jalapeño-based takochiles make the same ingredients feel quite different.
The Trenton Road branch publishes service until 2:30 a.m. Sunday–Wednesday and 3:30 a.m. Thursday–Saturday. A loaded potato or prepared beans can complete the order without another five tacos. Other Herradura branches serve nearby Valley municipalities; the profile lists their separate contacts so a diner beginning in Pharr or Mission can choose the appropriate journey.
Choose the preparation first: crisp or soft trompo, a five-taco comparison, or bistec and tripa with a late closing time.
