About Borgo Santo Pietro
Borgo Santo Pietro, boutique hotel and estate in Tuscany
Borgo Santo Pietro is a collection of lifestyle companies based in the Tuscan countryside. At its core is a five-star boutique hotel and spa, set on a 300-acre (about 120-hectare) organically farmed estate. The complex includes restaurants, an organic skincare line, a charter yacht, a property design and construction company, and a cooking school. The property, with a 13th-century villa at its heart, was originally a resting place for medieval pilgrims.
Accommodation in an 800-year-old farmhouse
The hotel, known as Relais Borgo Santo Pietro, occupies an 800-year-old farmhouse. It has 22 rooms, each individually designed with selected antique pieces, bespoke beds, and hand-painted frescoes. The rooms offer intimacy and seclusion, with light-filled interiors opening onto Mediterranean courtyards or private terraces with outdoor fireplaces, private pools, lounge areas, and gardens. Some suites can be connected internally for families or groups of friends. The hotel also has a brick wine cellar with boutique labels.
Restaurants: Saporium and Trattoria sull'Albero
The main restaurant, Saporium, is guided by the principles of biodiversity and regenerative agriculture. Its cuisine, defined as "soil-to-plate," is led by executive chef Ariel Hagen and his team, which includes a master gardener, forager, cheesemaker, baker, fermentation specialist, butcher, restaurant manager, and sommelier. The restaurant has received a Michelin star.
Trattoria sull'Albero, whose name means "treehouse," is built around a large oak tree and offers a relaxed lounge and dining atmosphere overlooking the fields and forests of the Valle Serena. Its menu features classic Tuscan cuisine with organic ingredients from the estate: freshly picked vegetables, artisanal cheeses, free-range eggs, in-house prosciutto ham, and zero-kilometer sourced meat. Every Monday evening it hosts a gourmet farmers' market where guests can choose meat, fish, cheese, and seasonal produce, watch it being cooked on the spot, and dine outdoors with live music.
The estate: organic farming and livestock
The 300-acre estate is organically cultivated and includes market gardens, nut fields, herb gardens, extensive vineyards, and forests, some of which house the estate's drove of pigs. Each day the farmers collect milk from the sheep, which is transformed into artisan cheese and yogurt at the on-site dairy. The farm also has free-range chickens, honey bees, and alpacas. The freshwater Merse River, famous in the region, runs through the estate's surroundings. All this production supplies and inspires both the Michelin-starred restaurant and Trattoria sull'Albero.
Satori, charter yacht
Satori, whose name means "instant enlightenment," is a wooden sailing yacht hand-carved by the Borgo Santo Pietro group. It combines five-star luxury with the splendor of nature. The yacht features polished mahogany, teak, and walnut, as well as large windows that evoke the sophistication of 1920s and 1930s sailing yachts, with all contemporary comforts. It has five luxury cabins, marble bathrooms, a spa installation, several quiet common areas, three sun decks with sofas, a large salon with a lounge and dining area, and a private dining area on the main deck with a bar. With two 600-horsepower engines, guests can choose to sail or motor. Satori is available for charter in the Mediterranean, in Italian, French, Greek, Turkish, and Croatian waters, with itineraries adaptable to clients' preferences.
Seed to Skin: natural skincare
Seed to Skin is an artisanal luxury skincare line that combines nature and science. Its products are presented in dark green glass jars and are based on the power of plants, using science to extract the best holistic properties for skin regeneration and health. The founder, Jeanette Gron Thottrup, has applied her lifelong search for natural herbal remedies together with a team of experts and scientists to create a natural molecular system for facial and body care. The products have been made for years in the estate's own laboratory on the 12th-century Tuscan estate. The brand states that its range is clinically proven to achieve authentic cellular regeneration and that its raw ingredients are 100% natural, sustainably sourced from suppliers around the world, from the Borgo Santo Pietro estate, and from its Tuscan surroundings.
PN Homes: property design and construction
PN Homes is the group's residential and commercial property design and construction division. With 20 years of experience, it presents itself as a pioneer in conceiving and delivering exceptional projects for global clients. Its managing director, Claus Thottrup, owns a five-star boutique hotel, two Michelin-starred restaurants, and a luxury commercial yacht, which gives him knowledge of the financial investment required to realize luxury properties and to anticipate the practical needs of guests and staff in various commercial contexts.
Awards and location
The hotel has received various awards: Fodor's Finest Hotels Awards 2025, three Michelin Keys 2025, inclusion in the Michelin Guide 2025 with a Green Star and Red Star, the Tatler Spa Guide 2024 for its Seed to Skin spa, the Condé Nast Traveler Readers' Choice Awards 2025 (14th in Europe and 19th in Italy), and inclusion in The Tatler Travel Guide 2025 among the 101 best hotels in the world.
