Kitchen team

Mashya's kitchen has featured chefs with outstanding careers. Bar Tzanger, a native of Kfar Saba and a resident of Jaffa, trained at Alain Ducasse's culinary school and interned at L'Arpège, a three-Michelin-star restaurant, under the direction of Alain Passard. His approach is based on letting the ingredient speak for itself and on using every part of it without waste. Before joining Mashya, he led the kitchen at the restaurant Giardino, in Jaffa, and in 2026 he won the eighth season of the show 'Game of Chefs'.

Gil Dahan, 32, has also served as chef at Mashya. His culinary philosophy is based on deep respect for ingredients and on using them fully to minimize waste. Dahan developed part of his career in kitchens such as Kitchen Market and Weiss & Cena, and his style combines ingredients from different origins with a personal interpretation of local flavors. One cited example of his approach is the squid dish 'Chorizo', made from his grandmother's 'Hamusta' broth.
