About Dragsholm Slot

Dragsholm Slot, a castle hotel with acclaimed gastronomy in Odsherred

Dragsholm Slot is a hotel and restaurant set in a castle more than 800 years old, located in Odsherred (Denmark), one hour from Copenhagen. The property is part of Relais & Châteaux and appears in the Michelin Nordic Guide, with one Michelin star. Since 1937 the building has operated as a hotel and restaurant open to the public, except during the final years of the German occupation.

The property presents itself as a luxury castle hotel with Danish heritage. Its offering combines accommodation, gastronomy, private events, meetings and conferences, as well as a chapel for weddings and religious services. The Böttger family is listed as custodian of the establishment.

Accommodation and stays

The castle has 41 double rooms spread across a historic building. The stay is conceived as an immersive experience linking the property's heritage with contemporary comforts. The website describes different types of stay, including gourmet stays, and allows accommodation to be booked through its website.

Restaurants and gastronomic offering

Dragsholm Slot has three distinct restaurants. The cuisine relies on seasonal produce, herbs and vegetables from Odsherred, and on the surroundings of fields, forests and coastline around the castle, presented as one of Denmark's finest produce regions. The castle Bistro serves lunch and dinner in a historic setting with seasonal ingredients. The gastronomic offering also includes a gourmet restaurant and a cocktail bar, as well as a wine cellar.

The website's events calendar includes seasonal dinners and tastings, such as a game dinner in October 2026 and a winemakers' dinner dedicated to Burgundy in November 2026. The material indicates prices per person for these activities.

Events, meetings and celebrations

The castle offers spaces for meetings and conferences, with nine meeting rooms and specific packages. It also hosts private events, groups, team building, weddings, parties, galas and lunches. The castle chapel is available for weddings and religious services. The website allows enquiries to be sent to organise this type of gathering.

Visits, shop and surroundings

The castle organises historical guided tours with lunch, with specific dates and a price per person indicated in the calendar. In Herskabsstalden there is a castle shop with selected delicacies, local produce, wines and interior and lifestyle items. The establishment also sells gift cards redeemable for stays, gastronomy and experiences, for a flexible amount or for specific stays and meals.

Dragsholm Slot is located in the Odsherred UNESCO Global Geopark, a landscape of hills formed during the Ice Age. The castle has two vineyards, an outdoor gym and two dining terraces.

Historical background

The origins of Dragsholm date back to around 1215, probably as a palatium and with possible links to Roskilde Cathedral. Between the 14th and 15th centuries it was expanded into a fortified castle with four wings, reinforced walls, reduced windows and a wider moat. In 1535, during the Count's Feud, it was besieged for several months and suffered gunfire, although it was not taken by storm. After the Reformation, in 1536 it passed from the Diocese of Roskilde to the Danish Crown and served as a royal fief and prison for noble and ecclesiastical prisoners. Between 1657 and 1660, during the wars between Denmark and Sweden, it was occupied and part of the castle was blown up towards the peace agreement of 1660.

Frederik Christian Adeler took over the castle in 1694 and completed its reconstruction in 1697, giving it its Baroque appearance with whitewashed walls, hipped roofs and a more symmetrical courtyard. In 1785 it was elevated to a barony and renamed Adelersborg. In 1868 it regained the name Dragsholm Slot on the initiative of Georg Frederik Otto Zytphen-Adeler, who also took part in the drainage of Lammefjorden. In 1937, after a change of ownership and the subdivision of the land, it was sold to Johan Frederik Bøttger and began operating as a hotel. Mads Hylleholt Bøttger joined as director in 2005 and in 2006 the cellar level was inaugurated with reception, kitchen and gourmet restaurant, which strengthened the establishment's gastronomic profile.
