Kadeau
Nordic restaurant with two locations in Denmark, in Bornholm and Copenhagen, combining seasonal produce, its own kitchen garden and handcrafted ceramics from the island.
About Kadeau
Kadeau, seasonal Nordic cuisine between Bornholm and Copenhagen
Kadeau is a Danish restaurant project founded by childhood friends Nicolai Nørregaard, Rasmus Kofoed and Magnus Klein Kofoed, all three from the island of Bornholm. Its approach is built around the island's traditions and landscape, expressed through a Nordic cuisine shaped by the seasons and the terroir of Bornholm. In 2022, chef Kyumin Hahn, who had been associated with the restaurant for years, joined the management as a partner.
Two restaurants and a recognised track record
The first location, Kadeau Bornholm, opened in 2007 on the sandy beach of Øster Sømarken, at the southern tip of the island. In 2011 the project expanded with Kadeau Copenhagen, located in the historic Christianshavn district. Its track record includes Michelin accolades: Kadeau Bornholm earned a star in 2016, the first and to date the only restaurant on the island with that distinction, while Kadeau Copenhagen received two stars in 2018 and has retained them since. Both restaurants were also awarded a Michelin Green Star in 2023.
The Kadeau garden
The restaurant has its own kitchen garden located less than a kilometre from the Sømarken location. Established in 2012 by Flemming, Nicolai's father, it currently has four plots, two of them greenhouses, and supplies the Bornholm and Copenhagen kitchens with fresh herbs, fruits, vegetables and honey during the warmer months. The team also works on preserving the garden's produce for the winter. It is now managed by Emil, a former sous-chef at the restaurant, who has developed permaculture practices and a healthy soil culture. The garden continually evolves to adapt to the needs of both restaurants throughout the year.
Handcrafted ceramics from Bornholm
Kadeau's tableware reflects the island's craft tradition, where ceramics are widespread and where the prestigious glass and ceramics school of the Royal Academy is located. All pieces are the work of ceramicist Torben Lov, who trained with Nicolai's father. His studio, Lov i Listed, is on the east coast of Bornholm and, for more than fifteen years, Nicolai has worked closely with him on the design and creation of every piece, sketching prototypes and discussing materials. The process is collaborative and a new line of ceramics is created each season: sometimes the designs are inspired by the menu devised by Nicolai and, at other times, the ceramics themselves influence the menu.
