About Saffire Freycinet

Saffire Freycinet, luxury accommodation on the Tasmanian coast

Saffire Freycinet is a luxury lodge located in Coles Bay, on the east coast of Tasmania, Australia. Its offering is built around all-inclusive stays, designer suites and a programme of experiences connected to the natural surroundings, local culture and regional gastronomy. The property presents itself as a place of rest where the landscape and a slower pace set the rhythm of the stay.

Accommodation: villas, pavilions and suites

The accommodation is organised into several categories. The Jewel Private Villa is a private three-bedroom villa spread across 800 m² of indoor and outdoor space, conceived for expansive stays and for those seeking privacy and meaning, according to the property's own description. The Private Pavilions are the most spacious suites and include a separate living room, dining area and kitchenette, designed for longer visits. The Signature Suites include all the features of the Luxury Suite plus a deep bath overlooking the water and the Hazards mountains. The Luxury Suites, designed with Tasmanian timbers and Australian design, feature a private deck facing the coastal surroundings.

Nature and local culture experiences

The experiences programme includes guided activities that connect guests with the land. The Freycinet Oyster Farm visit offers an insight into a working oyster farm in the waters of Coles Bay, with a guided tour of seabed harvesting and cultivation and a tasting of freshly shucked oysters. The Connection to Country experience is a two-hour walk, suitable for all abilities, through Saffire's native bushland alongside Mick Quillam, a Palawa artist and respected figure of the First Peoples of Lutruwita/Tasmania, who shares stories and knowledge passed down through generations. Saffire After Dark is a one-hour stargazing session, with unhurried storytelling and expert guidance, beneath the skies of the Southern Hemisphere.

Palate Restaurant and spa

Palate Restaurant offers a dining experience reserved exclusively for in-house guests, focused on local produce from the region and with panoramic views of the Hazards mountain range. The spa offers treatments using native botanicals, mineral-rich ingredients and hot stones carved from the pink granite of the Hazards.

The property appears in the MICHELIN Guide with two MICHELIN Keys in 2025. At the THA Awards for Excellence it has won gold in Best Deluxe Accommodation (5+ stars) in 2024 and 2025, and gold in Accommodation of the Year (Regional) in 2024 and 2025.
