Brae: restaurant, organic farm and accommodation in the Otways hinterland

Brae is an establishment led by chef Dan Hunter that brings together a restaurant, an organic farm and boutique accommodation on a hillside in the Otways hinterland, Victoria (Australia). The project is defined by a cuisine rooted in its place: dishes are made with produce from its own land and with ingredients from local growers, under principles of ethical and sustainable production.

A cuisine shaped by the landscape and the seasons

Brae's culinary approach evolves with the rhythm of the weather and the seasons. The team harvests daily from its working lands and complements that base with high-quality, ethically sourced produce from the region. The dining experience has been designed to accompany an exploration of – and immersion in – the environment surrounding the restaurant.

Regenerative farm and kitchen garden

Brae manages the surrounding land using regenerative farming techniques, free of pesticides and synthetic inputs, to produce much of what is served in the restaurant. Each morning, the team of gardeners gathers the harvest for that day's service. The property encompasses 20 acres of productive farmland and has established paths so that visitors can explore the landscape that inspires its philosophy.

Boutique accommodation on the property

The complex includes six architecturally designed guest suites, available to book at the time of the restaurant reservation. The suites can only be occupied on dates when the guest holds a confirmed dining reservation.

Service hours

The restaurant serves dinner on Thursdays from 17:00 to 22:00 and lunch on Fridays, Saturdays and Sundays from 12:00 to 18:00. The office attends to enquiries from 10:00 to 15:00, Wednesday to Friday.

Location and surroundings

Brae is located in the Otways hinterland, in Victoria, two kilometres from the township of Birregurra. The property acknowledges the Gulidjan people as the Traditional Owners and Custodians of the grasslands, woodlands, volcanic plains and lakes of the area.
