The business opened its doors in August 2008 in north-central San Antonio, in a small establishment that some customers described as a hole in the wall. For approximately seven years it operated there with an offering limited to Chicago-style hot dogs and beef sandwiches.

In March 2012 the company expanded with a second location in Universal City, called JK's The Bistro, with considerably larger space and menu. At that stage it added French fries, hamburgers, the gyro, and the Reuben sandwich, as well as salads and a variety of appetizers. The company notes that for three years it served the Universal City neighborhood and Randolph Air Force Base.

For personal reasons, the company closed both the Universal City location and the first shop and temporarily opened an establishment in the food court of Rolling Oaks Mall. Months later it moved to its current location in Country Village Plaza, where it adjusted the menu to fit the space.
