The establishment was founded by Remo and Meridith Mambelli. Remo Mambelli came to the United States in 1990 and accumulated over fifteen years of restaurant management experience in Manhattan, where he met Meridith when he hired her as a bartender. His interest in cooking began in Italy, where he spent years watching his mother cook, and from that influence come the techniques and recipes he applies at the restaurant.
