About Inver Restaurant & Rooms

Inver Restaurant & Rooms: seasonal Scottish cuisine on the shores of Loch Fyne

Inver Restaurant & Rooms is a dining and accommodation establishment located in Strathlachlan, in the Scottish region of Argyll & Bute, on the shores of Loch Fyne. The project, led by Pam and Rob, opened its doors in spring 2015 after transforming a lochside spot into a space combining a cosy bar, a restaurant, and six rooms. The culinary approach is shaped by the rhythms of the loch and the seasons of Argyll, with a kitchen the house itself describes as award-winning and which relies on local, seasonal produce.

Cuisine tied to its surroundings

Inver's culinary offering rests on three pillars: seafood caught in Loch Fyne itself, ingredients foraged from nearby forests and hills, and produce grown or reared by local community suppliers. The restaurant serves a six-course tasting menu in the evening, priced at £125 per person, which reinterprets traditional Scottish dishes with a contemporary approach and incorporates foraged ingredients and hyper-local flavours. At lunchtime it offers an à la carte menu emphasising the simplicity of seafood, native game, and seasonal produce, best enjoyed with views of the water. There is also a short children's menu, made in the kitchen, and children can order smaller, simpler versions of dishes from the lunch menu.

Accommodation: bothies and shepherd's huts

The establishment has six rooms spread across boutique bothies and shepherd's huts by the shore. All include bespoke breakfast hampers and views of the water and Old Castle Lachlan. The stay is conceived as an immersive experience: guests staying a single night must dine in the restaurant with the tasting menu; for multi-night stays, the tasting menu is offered one night and alternative menus the rest. Room rates cover bed and breakfast, and dinner is charged separately along with drinks and extras. The restaurant is open to resident guests every night of the week.

Awards and press

The restaurant has received praise from specialist media. Time Out described it as "a shining little jewel in the crown of the Scottish dining scene" and included the establishment among the 20 best restaurants in the UK. Critic Marina O'Loughlin, in The Guardian, highlighted that "everything we eat is eye-opening, enlivening, as bracing as a dip in the loch." Chitra Ramaswamy, in The Times, summed it up as "like eating the best idea of Scotland." Nicholas Lander, in the Financial Times, noted "a thoughtful use of the best local ingredients." Ron Mackenna, in The Herald, stated that a particular dish surpassed what he had tried in several Michelin-starred restaurants. The establishment also features in the Michelin Guide and the AA Guide.

Pam Brunton, head of the kitchen, published the book "Between Two Waters," winner of the Fortnum & Mason Food Book Award 2025, shortlisted for the Guild of Food Writers Awards, longlisted for the Highland Book Prize, and chosen as Book of the Year by the Financial Times. The work traces her journey to redefine modern Scottish cuisine through the seasons of Loch Fyne, national history, and a feminist food philosophy.

Sustainability policy

Sustainability is presented as a cross-cutting axis of the project. The restaurant describes itself as part of an ecosystem integrating the loch, the hillside, the producers, the staff, and the guests, and maintains that each element depends on the others to function. This perspective shapes supplier selection and sourcing, in a remote setting without daily deliveries.

Service and visitor conditions

The restaurant accommodates a maximum of six people per table. For bespoke dinners for guests of Lachlan Castle, prior contact is required. Dogs are welcome in the bar area, where there is a table reserved for dining with them, and there is a dog-friendly bothy; cats have also been welcomed in the room and the bar. Children are welcome and have their own menu; for younger children, lunch is recommended over dinner. Step-free access is available through the kitchen, with prior notice; the ladies' toilet has no step-free access, though discreet use of the gents' is offered. On the terrace, outdoor service is available when the weather permits, without reservation and on a first-come, first-served basis. The tasting menu consists of six or seven courses, with aperitifs in the bar by the fireplace or on the terrace in summer, and lasts approximately three hours; lunch takes between an hour and a half and two hours. Dietary requirements are accommodated with at least 24 hours' notice, extendable to a week for complex needs. There are specific cancellation policies for rooms and restaurant. Vouchers are not offered for packages, only for monetary amounts.
