History and evolution of the house
The building dates back to the 17th century, when the Townshend family established the house around 1640 as a traditional Norfolk manor house on the edge of the coast. Over the centuries it has had various uses, from a private residence and working farm to a rural retreat. In 1992, Galton Blackiston took on co-ownership of the house and began its transformation into a country retreat with a gastronomic vocation; at that time it had only four rooms and a few tables. In 1998 the restaurant earned its first Michelin star, which it has retained ever since. The property was founded by Galton Blackiston in 1991 and the kitchen is currently led by Executive Chef Farrel Hirsch.
Culinary offering
The culinary offering centres on a seven-course tasting menu that changes daily and is made with local produce or ingredients grown in its own kitchen garden. The kitchen works with sustainably sourced seafood and game, as well as ingredients from the garden, which are incorporated into both the menu and the cocktails. The chefs plan months in advance alongside head gardener Robin to bring interesting and unusual ingredients to the menu and the cocktail list. Every day something from the garden is used: from heritage tomatoes, courgette flowers and soft herbs to figs, baby beets and edible blooms. The property also works with local producers, fishermen and growers, some of whom have supplied it for decades, with the aim of reducing food miles and supporting the rural economy.
