About The Jackdaw

Within Conwy’s walls, The Jackdaw occupies the upper floor of a historic High Street building, in a town shaped by its castle battlements and medieval defences. Its name refers to someone born inside the walls, and the cooking also aims to tell a local story: owner-chef Nick Rudge builds modern tasting menus around Welsh produce and a contemporary reading of the north of the country. This is not a quick stop after the castle, but a planned meal that becomes part of the trip.

The restaurant serves tasting menus only, for lunch or dinner depending on the day, and publishes seasonal menus ahead of booking. The Michelin Guide describes an intimate room in a former cinema and highlights the links between the seasons, Welsh ingredients and presentation. The wine list is arranged by how far each bottle travelled, reinforcing the focus on provenance. The restaurant is on the first floor and has no wheelchair access; it also asks guests to notify the team of dietary needs in advance and says it cannot meet some serious restrictions.

Diners’ comments repeatedly mention creative dishes, attentive service and a sense that the meal speaks of the region rather than serving a generic sequence of recipes. Some criticism notes that a long, high-priced menu will not suit every taste, and that individual courses may divide opinion. Michelin selects the restaurant, but selection is not the same as a Michelin star. Tables are limited and the format takes time, so visit the castle first and arrive without rushing.

The castle and town walls are part of Edward I’s UNESCO-listed fortifications; construction began in 1283, and a walk follows the outline of the medieval town. The Jackdaw is a few minutes on foot from the station and castle entrances. For a chef-led meal, it is the more deliberate option; The Erskine Arms offers an inn-and-pub contrast, with a more flexible menu for families or groups.
