History

Founder Carlos Cobo began making sobaos, quesada and cookies in his former home's garage in 2012. He started selling to tour groups visiting Cantabria in 2014. When tourism disappeared during the 2020 pandemic, the company opened its online store and also gave other small producers a sales channel. The business moved to its Ambrosero bakery and opened a physical shop in 2021. Its pony-head logo honors Canela, the founder's first pony.
