About Dusk Restaurant
Dusk Restaurant, seasonal fine dining in Stellenbosch
Dusk Restaurant is a fine dining establishment located in the centre of Stellenbosch, on historic Plein Street. It was founded in 2022 by chefs Callan Austin and Darren Badenhorst and has built its reputation around its tasting experience, a journey that revolves around seasonality, creativity and storytelling through food.
The restaurant presents itself as one of the most awarded in Stellenbosch in its segment. Its cuisine is built around fermentation, seasonal produce and a narrative idea behind each dish, conceived as much from memory and emotion as from technique. The restaurant's living pantry, based on in-house ferments and strictly seasonal produce, keeps the menu in constant motion: when a ferment reaches the end of its life or an ingredient falls out of season, the dish is not adjusted but reinvented. According to the restaurant itself, more than 200 entirely unique dishes have been created since opening.
Two ways to dine
The main offering is the Signature Tasting Experience, a carefully curated journey that the restaurant describes as a celebration of seasonality, creativity and storytelling through food. In 2026, Dusk also introduced an à la carte menu that sits alongside the tasting menu and offers an alternative way to enjoy the restaurant. That menu is inspired by great international fine dining references and brings together timeless European classics, signature dishes of the house and local produce, with greater flexibility without compromising on craftsmanship or hospitality.
Both experiences share the same philosophy: exceptional ingredients, thoughtful execution and genuine hospitality. The restaurant presents the à la carte menu as an invitation for guests to compose their own journey with dishes designed to be shared and returned to.
Wine programme and front-of-house team
The cuisine is accompanied by an award-winning wine programme led by Head Sommelier George Young. Young is a WSET Level 3 and Cape Wine Academy graduate, and in 2024 he was named Best Young Sommelier of South Africa by the South African Sommeliers Association (SASA). The restaurant highlights his knowledge, his meticulous approach and his ability to tell stories through wine, as well as his dedication to team training. With him at the helm, the wine programme is focused on enhancing pairings, broadening the selection and deepening the relationship with guests.
The front-of-house and kitchen team includes people with specific responsibilities: Jason, head waiter and wine assistant, involved in the project from its conception; Sam, assistant restaurant manager and sommelier; Zandi, at reception; Siya, waiter; Amos, who moved from the scullery to the floor; and James, who came from the scullery and aspires to move to the bar. In the kitchen are Garin, senior sous chef; Slade, junior sous chef and grill chef, with previous experience at Cape Town establishments; and Hlekani, chef de partie, previously at Nocturne.
The founders and creative direction
Callan Austin is executive chef and co-founder, and is presented as the creative vision behind the menu. The restaurant notes that he seeks inspiration from every corner of life and sees food as an art form and a medium to express ideas and tell stories, from the politically charged to the playfully nostalgic. In 2024 he received a knife at the International Best Chef Awards and was named Chef of the Year at the LUXE Awards 2024.
Darren Badenhorst is co-founder and a seasoned figure in South Africa's culinary scene. His career includes several established restaurants, the first of which was the renowned Le Coin Français in Franschhoek. At Dusk he provides support and guidance, and he played a fundamental role in the restaurant's initial conceptual development.
DAWN, private space and development kitchen
Dusk has DAWN, a private dining space and development kitchen in Stellenbosch. It is conceived both as a creative lab for the restaurant's evolving ferments, concepts and dishes, and as an exclusive setting for luxury events, collaborations and bespoke gatherings. It has a table for 22 guests, an open show kitchen and menus that change with the seasons. The space is offered for private events, corporate gatherings and brand showcases, and includes exclusive events with new culinary concepts and collaborations with chefs and brands.
Awards
The restaurant lists a series of distinctions obtained between 2022 and 2025. At the Eat Out Awards it received the Best New Restaurant award in 2022, three stars in 2023/2024 and again the highest accolade of three stars in 2025, for the second year. In the Gourmet Guide it obtained two plates in 2023 and 2024, a category the guide describes as exceptional dining that demands a detour. At the LUXE Awards it received three stars in 2025 and chef Callan Austin was named Chef of the Year in 2024. In the international La Liste ranking, the restaurant appears with 90 points in 2024. Chef Callan Austin also received a knife at the International Best Chef Awards 2024.
