Maskay guide

Where can you eat traditional Parma dishes in the centre, and how do two trattorias compare?

Torta fritta, cured meats and regional pasta: two central restaurants, their differences and what to check before booking.

In Parma, a meal can begin well before the main course: a board of cured meats, freshly served torta fritta and a discussion about which pasta should follow. That regional richness can also make a search for “somewhere traditional” rather vague. Two central tables, Trattoria Corrieri and Osteria dei Servi, provide different ways into local cooking. The choice turns on whether you want a familiar set of classics or a wider menu that includes grilled meat.

Corrieri tells the story of an old courier stop from Maria Luigia’s time, when travellers ate while their horses rested. Its website now foregrounds torta fritta with cured meats, cappelletti in broth, Parma ham and Parmigiano Reggiano. That makes a clear sequence for a first regional meal: share a starter, then choose a pasta dish. Visible reviews praise the trattoria atmosphere and familiar recipes; some warn of waiting or uneven service when it is busy. A reservation keeps lunch from becoming a gamble.

Osteria dei Servi is at Piazza Ghiaia 1. Its menu also looks to Emilian produce, but the grill broadens the choice for anyone who does not want pasta to define the entire meal. Reviews mention meat, salumi and regional dishes in a lively setting; some advise securing an indoor table if that matters. This restaurant must be distinguished from Osteria dei Servi Fuori le Mura: a shared name does not mean a shared address, reviews or experience. Its booking page explains that a form request is confirmed only when management replies and that weekend reservations are taken by phone.

Both restaurants fit a walk through the centre, but “good value” takes more than a strong rating. Compare the current menu, the number of courses you intend to order, wine and any supplement; do not infer a full bill from a photograph or a third-party price band. Corrieri lists daily opening from noon to midnight, although you should confirm kitchen service for a late arrival. Osteria dei Servi publishes narrower lunch and dinner services. For a first visit centred on torta fritta and pasta, Corrieri offers a straightforward route; if your group wants to alternate between pasta and the grill, Servi offers more choice.
