Where should I eat Mexican food in Phoenix, Arizona: Chilte or Otro Cafe?

Mexican cooking in Phoenix can be familiar without standing still. Chilte, at the Egyptian Motor Hotel on Grand Avenue, treats tacos, quesadillas and mole as frameworks for an experimental kitchen. Otro Cafe, in Central Phoenix, starts from Doug Robson’s Mexico City background and gives a neighborhood table room for both recognizable dishes and wider influences. Choosing between them means deciding how much surprise you want in the composition of the meal, rather than assuming every Mexican dinner must begin and end with the same kind of taco.

Chilte’s chef Lawrence “LT” Smith draws on street-food beginnings, personal memories and the Southwest. Food & Wine selected him for its 2024 Best New Chefs class. His restaurant explains its culinary direction through a sample menu that includes current and past preparations: a green-chorizo vampiro with asadero cheese and chapuline schmaltz, or a hoja-santa quesadilla with goat cheese and optional huitlacoche. The forms remain recognizable, while the ingredients make the kitchen’s own argument.

The same approach appears in the sample birria tacos, illustrated with squid-ink corn tortillas or flour tortillas and a miso consommé. Mole de la casa accompanies changing flautas, and vegetables appear through preparations such as a tomato tostada rather than only as garnish. These examples describe a changing repertoire, not a fixed lineup for every visit. A dinner at Chilte makes most sense for someone interested in tortilla, filling, sauce and accompaniment as a whole. Its cocktail menu extends the conversation with ingredients including tomatillo, pepita, poblano and cacao.

Otro’s route is broader in another way. Robson grew up in Mexico City with a French-Vietnamese mother and a Scottish-English father, and opened Otro in 2013. Tacos with carne asada, barbacoa, pork belly or vegetables give the diner familiar choices. Mesquite-grilled elote, queso fundido and enchiladas provide other recognizable beginnings or main courses. The menu also carries the chef’s personal range through preparations such as rice-noodle chicken soup and lamb riblets finished with guajillo and chimichurri.

For a more composed dinner, Otro offers chicken with mole negro or a mesquite-finished half chicken with tamarind glaze. A table interested in sharing can pair a corn or vegetable preparation with contrasting taco fillings, then decide whether a larger dish is needed. Vegan pozole and vegetable enchiladas widen the choices without making everyone follow the same diet. The breadth is useful for families and friends whose appetites differ, especially when one person wants a familiar dish and another wants to explore.

Choose Chilte for a planned dinner in which the changing combinations are part of the attraction. Choose Otro when a flexible neighborhood menu, tacos and larger dishes need to coexist at the same table. Both illustrate Mexican cooking through a particular Phoenix kitchen, with distinct histories and culinary intentions. The rewarding order is one that notices those differences: a sauce beside a crisp tortilla, a grilled preparation beside something fresh, and enough variety to make sharing an act of discovery.
