That is an especially clear way to compare preparations. Chirashi gathers fish and vegetables over rice; hamachi carpaccio introduces yuzu, grapefruit and serrano. A sea-bream tiradito brings in myoga and ume with a white-wine-and-yuzu dressing, showing a more composed side of the kitchen.
The rolls offer another register. The Harumi Roll combines shrimp tempura, crab salad, avocado and cucumber with tuna and spicy sauces; the Garden Roll uses mango, asparagus and avocado in soy paper. A meal dominated by these combinations will differ from one centered on sashimi or simpler nigiri. Choosing a few contrasting forms can give everyone something to discuss without burying the fish beneath a succession of similar sauces. The downtown menu belongs to the First Avenue restaurant, rather than its separate Peoria branch.
Hana is a strong fit when cooked Japanese dishes need equal standing with sushi and the group is comfortable with a walk-in format. Harumi suits a downtown meal where the table wants to move among individual pieces, bowls and composed rolls. Neither requires ordering an impressive quantity to make the dinner worthwhile. A more deliberate approach is to choose the preparation that interests each diner, then share one contrasting dish. That produces a Japanese meal with a direction, rather than simply a long order.
