Bamberg Cathedral rises above a city whose medieval layout is still legible across three historic areas: the hill, the island town and the market gardeners’ district. UNESCO added the ensemble to its World Heritage List in 1993 and notes that Henry II made Bamberg a bishopric in 1007. In the streets below the cathedral, another local identity survives—less solemn and closely tied to the table: smoked beer. Two stops offer different ways to understand it without turning the visit into a race between pubs. Schlenkerla, beside the cathedral, is the historic tavern where Rauchbier is served from a wooden cask; Spezial-Keller climbs towards the observatory and pairs Franconian beer with a panoramic terrace.
The smoky taste begins before fermentation: malt is dried with smoke, an old practice that disappeared in many places as modern drying methods spread. Schlenkerla preserves the method and a documentary reference dating to 1405; its menu lets visitors pair the beer with stuffed Bamberg onion, smoked-malt sausages, pork knuckle or Schäuferla. Rauchbier can have a powerful aroma for first-time drinkers. It is sensible to order a small pour, ask about a milder beer or choose a non-alcoholic drink and focus on the food. The kitchen serves from 11:00 to 22:00, while the tavern remains open longer.
Spezial-Keller changes the scene: the climb leaves the centre behind and leads to a beer garden beneath plane trees, with views towards the cathedral, Michaelsberg and the old town roofs. The menu adds Franconian classics such as Schäuferla with sides, and the venue also serves its own Rauchbier. This stop depends more on weather, timing and mobility: the terrace is a reason to go, but the steep, cobbled approach is not comfortable for everyone. The garden can also fill up in summer; the venue accepts reservations and closes on Mondays. Public comments often celebrate the outlook and beer, while also describing waits and more moderate experiences with some dishes.
The choice depends on your route. If you are already around the cathedral and want a direct introduction to smoked beer, Schlenkerla is the easier stop, with a seasonal courtyard in the former Dominican complex. If you have time to climb and want an outdoor break with a broad view, Spezial-Keller adds scenery and beer-garden atmosphere. From the tavern you can continue towards the Old Town Hall and the Regnitz; from the Keller, walk back down through residential streets. In either case, check kitchen hours and table availability, especially at weekends. Bamberg is best enjoyed without rushing the beer: Rauchbier is a speciality to taste slowly, not a requirement for completing the visit.
Schlenkerla brings Rauchbier close to the cathedral; Spezial-Keller adds a terrace and views. Choose according to your time, mobility and preferred setting.

Spezial-Keller sits on a hillside beside the observatory and a short walk from Bamberg’s historic centre.
