The Palace of the Dukes and Estates of Burgundy is more than a photographic backdrop: it now houses Dijon's town hall and Fine Arts Museum. Walking out towards Place de la Libération, the city offers another way to read its identity, this time in jars and tasting spoons. Mustard appears in very different shop windows. A useful visit means tasting, asking how it is made and deciding whether it deserves space in your luggage. Two central shops make that possible without turning the afternoon into a journey outside Dijon.
The first, La Moutarderie Fallot – Boutique-Atelier Dijon, stands at 16 rue de la Chouette, near Notre-Dame church and the markers of the Owl Trail. Fallot's mustard mill is in Beaune; this city branch brings together a shop, tastings and a demonstration of grinding seeds on stone. Its website describes a tasting counter and stoneware jars that can be filled. It should not be presented as a tour of the complete Beaune factory. Its value lies in seeing part of the process and comparing flavours before buying.
The second address, La Maison Maille Dijon, is at 32 rue de la Liberté, the main shopping axis that links easily with the palace. The company dates the opening of this shop to 1845 and offers tastings of mustards served from the pump, vinegars, gherkins and other condiments. Refillable jars bring a gift and presentation element to the purchase: ask about size and blend rather than selecting only by the look of the pot. This is the experience of a long-established commercial house, different from Fallot's workshop setting.
The comparison also has a financial side. Customer accounts praise tastings and explanations at both shops; some consider prices high beside supermarket versions or describe uneven service. There is no need to crown one mustard as the only authentic choice. Someone who cooks daily may prefer a classic flavour in a manageable jar; a gift buyer may favour stoneware or an unusual blend. Your own palate, after tasting, is a better guide than the most striking label.
The route works on foot from the palace: rue de la Liberté for Maille, then through the old streets to rue de la Chouette for Fallot. Maille lists Monday-to-Saturday opening from 10:00 to 19:00. Fallot also lists Sunday hours, but only for the morning, and some directories disagree, so check its own website before a public holiday. The walk joins museum, urban heritage and local flavour in one afternoon without mistaking the two shops for the same kind of experience.
Fallot offers a workshop setting for understanding and tasting mustard; Maille suits comparisons and gifts on the main shopping street.

La Maison Maille stages mustard differently from a workshop: counters, stoneware jars and pumps dispensing fresh varieties on Dijon's main shopping street.
