From Tejeda’s landscape to the ocean
Muxgo begins with the island’s interior. Its cooking, tied to agriculture and Canarian produce, shapes menus around place, memory and season. Borja Marrero’s ecological farm in Tejeda is not a decorative line in the story: it helps explain why vegetables and other ingredients evoke the island’s elevation and landscape. A plant-based menu extends that reading to guests avoiding meat and fish. In the same Santa Catalina complex, Poemas by Hermanos Padrón offers a different intensity. It is not a table for an improvised lunch: dinner has published service hours, and online booking is the natural way to arrange an evening that may unfold across several courses.
Vegueta, the city and its culinary traditions
Tabaiba shifts the focus to the islands’ culinary heritage. Abraham Ortega takes Canarian references and reworks them into seasonal tasting menus, served in set sittings and conceived as a narrative. The whole table is asked to choose the same menu, a practical detail to know before booking. It is for diners who want the cooking to explain a place, rather than simply solve a meal quickly.
El Equilibrista 33 offers a more flexible way into contemporary island cooking. Carmelo Florido brings gofio, fish and other Canarian ingredients into a changing menu without requiring every guest to commit to a long tasting sequence. Diners can talk, share several plates and recognise familiar flavours handled with modern technique. That distinction matters: after a day between Vegueta, Triana and the coast, not everyone wants the same ceremony or the same time at the table.
Choose with a clear idea of the meal
For an agricultural, place-led experience, Muxgo looks towards the mountain interior; for a formal dinner tied to the sea, Poemas offers a multi-course menu; Tabaiba tells the Canaries through a culinary sequence; El Equilibrista 33 brings more freedom of choice to island traditions. The first three are high-priced experiences best treated as a central part of the trip, with a reservation and a careful look at menus and booking terms. The fourth provides a less ceremonial contrast while remaining author-driven cooking. Las Palmas then becomes more than a backdrop between the beach and old town: it becomes a conversation about Gran Canaria’s larder.
