In Aso, food tells part of the landscape’s story. Akaushi, a brown-coated Wagyu breed, grazes on grasslands around the caldera; the local tourism association notes that grazing and human care help maintain these fields. Served over rice with different degrees of doneness and accompaniments, the region’s best-known bowl is akaushi-don—a direct way to taste the area’s lean, flavourful beef. Two well-known restaurants offer different stops for travellers exploring by car or local transport.
Imakin Shokudo is in Uchinomaki, a former hot-spring district, and has served as a neighbourhood diner for more than a century. Its akaushi-don places rare-cooked beef over rice and is often paired with an onsen egg; the menu also includes beef hamburg steak and champon. Popularity brings a practical complication: the local tourism association warns that queues form even on weekdays. Taking a number on arrival and walking around Uchinomaki while waiting may work better than arriving exactly at lunchtime.
Aso Hanabishi is beside Aso-jinja in Miyaji and offers another way to explore the local beef: besides the akaushi bowl, tourism sources and its menu describe grilled cuts, curry and other meat dishes. Visitors often praise the tender beef, pickles and location by the shrine; other comments mention waits and a price higher than a quick meal. Imakin draws praise for flavour and its long history, while queue times and cost also appear in public feedback. The useful choice is less about which place is “best” and more about the route: Uchinomaki and its public baths, or the shrine precinct.
Imakin is at 290 Uchinomaki; Hanabishi is at 1861 Ichinomiya-machi Miyaji. The local tourism association lists Imakin’s hours as 11 am–3 pm and Wednesday closing, while current Google and other directory listings may differ. Call ahead and allow time for the queue. Hanabishi lists 11 am–4 pm, closing Tuesdays, and accepts cards and PayPay. Aso-jinja and its approach street sit beside Hanabishi; Imakin pairs naturally with the Uchinomaki hot-spring district. Rural transport and volcanic conditions can affect a day’s plan, so check both before setting out.

Aso Hanabishi is in Miyaji beside Aso-jinja, making lunch part of a visit to the historic centre of Ichinomiya. Timber beams give the restaurant the feel of an old house, while the menu focuses on regional cooking: akaushi appears in rice bowls, curry and grilled dishes, alongside pickles and vegeta
