Mesón de Cándido is Segovia's most emblematic restaurant, right at the foot of the Aqueduct. It has been in the same family for over a century —now the fifth generation— and is tied to the figure of Cándido, seen as the great promoter of Segovian cooking and of roast suckling pig.

Its signature dish is roast suckling pig (cochinillo asado), served with the famous ceremony of carving it with the edge of a plate to show its tenderness, a gesture known worldwide. The menu rounds out traditional Castilian cuisine in a historic building overlooking the Aqueduct.
