Las Tortillas de Gabino

Las Tortillas de Gabino takes its name from the cook who made the potato omelette a specialty at La Ancha. The Velazqueña retains the connection with that restaurant on Calle Velázquez, where the dish became popular in the 1960s. Here on Rafael Calvo, in Almagro within the Chamberí district, an everyday recipe becomes the centerpiece of a sit-down meal, with starters and other dishes for a longer visit.

The traditional potato tortilla and its truffled counterpart offer two ways into the kitchen's signature dish. There is also room for vegetables and seafood: green beans with pea cream, red-prawn potato salad, gratinated razor clams and marinated fried anchovies. You can build a varied meal around the specialty without ordering a succession of omelettes.

Inside are two connected dining rooms, a private room and a glass-fronted wine cellar. The kitchen is visible from the passage linking the spaces. This is a restaurant for sitting down over familiar Spanish flavors in a more considered setting, rather than a quick stop for a snack at the counter.
