Sobakiri Arabompu devotes its small Nishitemma counter to buckwheat noodles. From your seat, you can watch the cooking, washing and plating, making the craft part of the visit. The dipping sauce follows the Kanto style, reflecting the region where the chef trained.

The Soba Zanmai set offers three half portions: nihachi, juwari and arabiki. The first mixes buckwheat with wheat flour, the second uses buckwheat flour alone, and the third is distinguished by its coarse milling. Comparing them in one meal helps reveal differences in texture and aroma that are easy to overlook with a single order.
