At Hakata Hanamidori Hakata Ekimae, the main attraction does not arrive as a single finished plate. It is a mizutaki hot pot that evolves as it cooks. The kitchen uses its own Kyushu-raised Hanamidori chicken, with a chicken-bone broth into which different cuts, vegetables and tofu are added. The appeal is following the broth as it gains depth rather than collecting a long succession of specialties.

The brand grew from Yoshiharu Kawazu's work selling and raising chickens. That connection to the ingredient explains its appearance as pieces, minced meat and other cuts within the menu. The meal can finish with zosui, rice cooked in the broth, or noodles, making use of the flavor concentrated in the pot.

The Hakata Ekimae branch occupies the ground floor of the Dai-2 Fukuoka ON Building, around five minutes on foot from JR Hakata Station's Hakata Exit. Its 106 seats include counter seating, tables and private spaces, offering a different experience from a small ramen counter. Lunch and dinner service make it an option for a relaxed meal around a Hakata outing without needing the longest menu.
